Vegan Burrito Bowl with Easy Refried Beans

Ingredients

  • 1 can black beans, drained
  • 4-5 cloves garlic, minced (use less if preferred, my garlic was small)
  • 2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 cup vegetable broth
  • Salt and pepper to taste
  • 1 cup frozen fire roasted corn
  • Juice of half a small lime
  • Sprinkle of chili lime seasoning
  • 1 red pepper, sliced
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • Cooked rice
  • Mashed avocado
  • Hot sauce

Preparation

  1. In a pan, add black beans and garlic, and sauté until the garlic is fragrant.

  2. Using the back of a cooking spoon or spatula, lightly mash the beans until mostly mashed.

  3. Add vegetable broth, cumin, coriander, salt, and pepper to the pan, and stir to combine. Bring to a low simmer to thicken.

  4. Stir and mash the beans until they reach the consistency of refried beans.

  5. Reheat the frozen fire roasted corn in the microwave according to the package instructions.

  6. Squeeze fresh lime juice over the corn and sprinkle with chili lime seasoning.

  7. In a separate pan, sauté the red pepper, red onion, and minced garlic until soft.

  8. Assemble the bowl by adding rice, corn, peppers, onions, and the prepared refried beans.

  9. Top with mashed avocado and hot sauce.
