Chic Pea Salad

Ingredients

  • 1 can of chic peas
  • 3/4 cup chopped orange bell pepper
  • 1/2 cucumber chopped
  • 1 cup cherry tomatoes halved
  • 1/3 cup fresh herbs such as parsley or cilantro
  • 1 tbsp of olive oil
  • juice of 1 lemon or lime
  • salt & pepper to taste

Preparation

  1. Rinse and drain the chic peas and place them in a large bowl

  2. Chop the vegetables and herbs and add them to the chic peas

  3. Add oil, lemon juice and salt & pepper mix well
