Chic Pea Salad
Ingredients
- 1 can of chic peas
- 3/4 cup chopped orange bell pepper
- 1/2 cucumber chopped
- 1 cup cherry tomatoes halved
- 1/3 cup fresh herbs such as parsley or cilantro
- 1 tbsp of olive oil
- juice of 1 lemon or lime
- salt & pepper to taste
Preparation
Rinse and drain the chic peas and place them in a large bowl
Chop the vegetables and herbs and add them to the chic peas
Add oil, lemon juice and salt & pepper mix well
