French Lentil and Roasted Potato Salad
Ingredients
- 1/2 cup French lentils
- 1 pound nugget potatoes
- 1 tablespoon olive oil
- 1 red bell pepper
- 1 cup cherry tomatoes
- up to 1 cup fresh herbs (parsley, cilantro, or basil)
- vinaigrette to taste
Preparation
Soak 1/2 cup French lentils and steam until tender
Roast 1 pound halved nugget potatoes in 1 tablespoon olive oil for 30 minutes at 400°F.
While the lentils and potatoes are cooking, chop 1 red bell pepper, halve 1 cup cherry tomatoes, and mince up to 1 cup fresh herbs like parsley, cilantro, or basil.
Toss all ingredients together with your favorite vinaigrette to taste.
Enjoy the salad at room temperature or heat leftovers for a hot meal.
