French Lentil and Roasted Potato Salad

Ingredients

  • 1/2 cup French lentils
  • 1 pound nugget potatoes
  • 1 tablespoon olive oil
  • 1 red bell pepper
  • 1 cup cherry tomatoes
  • up to 1 cup fresh herbs (parsley, cilantro, or basil)
  • vinaigrette to taste

Preparation

  1. Soak 1/2 cup French lentils and steam until tender

  2. Roast 1 pound halved nugget potatoes in 1 tablespoon olive oil for 30 minutes at 400°F.

  3. While the lentils and potatoes are cooking, chop 1 red bell pepper, halve 1 cup cherry tomatoes, and mince up to 1 cup fresh herbs like parsley, cilantro, or basil.

  4. Toss all ingredients together with your favorite vinaigrette to taste.

  5. Enjoy the salad at room temperature or heat leftovers for a hot meal.
