Vegan Italian Quinoa Salad
Ingredients
- 1 cup quinoa
- 1/3 block smoked tofu
- 1/3 can chickpeas
- 1/2 bell pepper
- Handful cherry tomatoes
- 1/3 cup green peas
- 1/2 avocado
- Handful spinach
- Broccoli
- Handful pumpkin and sunflower seeds
- 2-3 tbsp Italian seasoning
- A couple basil leaves
- Olive oil and balsamic vinegar for dressing
Optional additions
- Red beet and cabbage sauerkraut
- Broccoli sprouts
Preparation
Cook quinoa if not already prepared
Steam broccoli until tender
Chop bell pepper, cherry tomatoes, spinach, and basil as indicated
In a large bowl, combine quinoa, tofu, chickpeas, chopped vegetables, peas, avocado, seeds, Italian seasoning, and basil
Drizzle with olive oil and balsamic vinegar to make dressing
Optionally, add sauerkraut and broccoli sprouts
Mix all ingredients well and serve
