Ingredients
- Spinach
- Couscous
- Black beans
- Red pepper
- Tomato
- Cucumber
- Celery
- Asparagus
- Broccoli sprouts
- Carrots
- Nutritional yeast
- Lemon juice and rinds
- Olive oil
Preparation
Cook couscous according to package instructions
Chop the vegetables: red pepper, tomato, cucumber, celery, carrots, and asparagus
Prepare a simple dressing by mixing lemon juice, olive oil, and nutritional yeast
In a large bowl, combine spinach, cooked couscous, black beans, chopped vegetables, and broccoli sprouts
