Vegan Tortilla Soup
Ingredients
- 3 tablespoons olive oil
- 1 medium onion, diced
- 3 celery ribs, diced
- 2 carrots, diced
- 1 cup salsa verde sauce
- 1 16-ounce can white beans, drained
- 1 16-ounce can kidney beans, drained
- 1 16-ounce can black beans, drained
Preparation
In a pan, heat your olive oil in order to sautee your onions with a pinch of salt for two minutes
Following this, add in and sautee your carrots and celery for another 3 minutes
After this, add in your combination of beans, salsa, and enough water to cover the pot with your onions, celery, and carrots
Cover this with a lid and let it all cook for 7-10 minutes
Finally, spoon your soup into a bowl and garnish with your tortilla chips, pumpkin seeds, avocado, and lime wedges
