Vegan Tortilla Soup

Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 3 celery ribs, diced
  • 2 carrots, diced
  • 1 cup salsa verde sauce
  • 1 16-ounce can white beans, drained
  • 1 16-ounce can kidney beans, drained
  • 1 16-ounce can black beans, drained

Preparation

  1. In a pan, heat your olive oil in order to sautee your onions with a pinch of salt for two minutes

  2. Following this, add in and sautee your carrots and celery for another 3 minutes

  3. After this, add in your combination of beans, salsa, and enough water to cover the pot with your onions, celery, and carrots

  4. Cover this with a lid and let it all cook for 7-10 minutes

  5. Finally, spoon your soup into a bowl and garnish with your tortilla chips, pumpkin seeds, avocado, and lime wedges
