Veggie Stew and Spelt Toast with Vegan Butter
Ingredients
- onion
- garlic
- olive oil
- courgette
- aubergine
- paprika
- 1 good quality tin
- vegan equivalent to parmesan cheese
Preparation
Fry onion and garlic in some olive oil
After a few minutes add some spices
I used basically every spice I had haha e.g. paprika, basilicum, oregano, cumin and even some ras el hanout) then I added my veggies (courgette, aubergine and paprika) and covered them with the spices
After a few minutes I added my precooked chickpeas and 1 good quality tin of tomatoes plus a bit of water to get rid of the excess tomatoes in the tin along with some salt and pepper - let that all cook for a bit
Right before turning the heat off I stirred through some spinach and checked the seasoning before serving it with some nutritional yeast
