Veggie Stew and Spelt Toast with Vegan Butter

Ingredients

  • onion
  • garlic
  • olive oil
  • courgette
  • aubergine
  • paprika
  • 1 good quality tin
  • vegan equivalent to parmesan cheese

Preparation

  1. Fry onion and garlic in some olive oil

  2. After a few minutes add some spices

  3. I used basically every spice I had haha e.g. paprika, basilicum, oregano, cumin and even some ras el hanout) then I added my veggies (courgette, aubergine and paprika) and covered them with the spices

  4. After a few minutes I added my precooked chickpeas and 1 good quality tin of tomatoes plus a bit of water to get rid of the excess tomatoes in the tin along with some salt and pepper - let that all cook for a bit

  5. Right before turning the heat off I stirred through some spinach and checked the seasoning before serving it with some nutritional yeast
