Homemade Tomato Soup

Ingredients

  • 6 large tomatoes
  • 2 red peppers
  • 2 carrots
  • 1 onion
  • 2 celery stalks
  • 4 garlic cloves
  • handful of fresh basil
  • 1.5 litre of veg stock
  • salt and black pepper
  • olive oil

Preparation

  1. Roast the tomatoes, peppers and garlic in the oven for 45 mins at 150c

  2. Meanwhile, sauté the onion and celery in a large saucepan for 5 minutes

  3. Add the chopped carrots and stock to the pan and continue cooking for 15 minutes

  4. Once the veggies are finished roasting, add to the pan along with basil, salt and black pepper

  5. Continue cooking for 15 minutes

  6. Transfer to blender and blend until smooth and creamy
