colourful beetroot soup
Ingredients
- 3 beetroots
- 2 sticks celery
- 2 springonions
- 3 garlic cloves
- 3 tbsp olive oil
- 1ts cumin
- pinch chilli flakes
- salt, pepper
- 1tb vinegar
- 500ml vegetable stock
- 400ml coconut milk
Preparation
Peel the beetroot and roughly chop it
Chop celery, onion and garlic
Add everything to a pot ith oil
Glaze for about 10 minutes
Spice with cumin, chilli, salt and pepper
Cook another 3 minutes
Deglaze with vinegar and mix in lime rasp
Add the veggie stock and bring everything to a boil
Turn down the heat, add a lid on top and let it simmer for about 40 minutes
Dont forget mixing it in between
Puree the soup
Add back tot he stove and mix in the coconut milk
Cook another 5 minutes
