Vegan Chili Sin Carne

Ingredients

  • 150g whole grain rice
  • 1 onion
  • 2 to 3 garlic gloves
  • fresh chili or powder to taste
  • 2 sliced carrots
  • 2 regular packages sieved tomatoes
  • 1 can black beans
  • 2 cans (150g) of kidney beans
  • 1 can of sweet corn (100g)
  • paprika powder
  • salt and pepper to taste

Preparation

  1. Sauté the garlic, onion, carrots for a few minutes, on a medium heat, until softened

  2. Add spices like cumin, chilli powder, salt and pepper and stir together

  3. Pour in the sived tomatoes, kidney and black beans, corn and vegetable stock

  4. Add in the extra flavourings, if using

  5. Add to the sauce the cooked rice! Afterwards, simply enjoy
