Spinach and Beet Salad with Couscous
Ingredients
- Spinach leaves
- Field greens
- Grape tomatoes
- 1 medium beet
- Hemp hearts
- Pepitas
- Cucumber
- Nutritional yeast
- Balsamic vinaigrette
- Couscous
Preparation
Boil the beet until tender, then chop it.
Quarter the grape tomatoes.
Slice the cucumber.
Cook couscous according to package instructions if not pre-cooked.
Combine all prepared ingredients in a large bowl.
Toss with balsamic vinaigrette to serve.
