Spinach and Beet Salad with Couscous

Ingredients

  • Spinach leaves
  • Field greens
  • Grape tomatoes
  • 1 medium beet
  • Hemp hearts
  • Pepitas
  • Cucumber
  • Nutritional yeast
  • Balsamic vinaigrette
  • Couscous

Preparation

  1. Boil the beet until tender, then chop it.

  2. Quarter the grape tomatoes.

  3. Slice the cucumber.

  4. Cook couscous according to package instructions if not pre-cooked.

  5. Combine all prepared ingredients in a large bowl.

  6. Toss with balsamic vinaigrette to serve.
