Loaded Vegan Salad with Quinoa and Greens
Ingredients
- arugula
- baby spinach
- baby field greens
- quinoa
- pink carrot coins
- red cherry tomatoes
- golden cherry tomatoes
- mini yellow and orange sweet peppers
- fennel
- pepitas
- hemp hearts
- asparagus
- vegan sausage
- nutritional yeast
- balsamic dressing
Preparation
Cook quinoa according to package instructions.
Grill asparagus and vegan sausage until tender and cooked through.
Wash and chop all vegetables and greens as needed.
In a large bowl, combine all ingredients except dressing.
Drizzle with balsamic dressing and toss gently to mix.
Serve immediately.
