Loaded Vegan Salad with Quinoa and Greens

Ingredients

  • arugula
  • baby spinach
  • baby field greens
  • quinoa
  • pink carrot coins
  • red cherry tomatoes
  • golden cherry tomatoes
  • mini yellow and orange sweet peppers
  • fennel
  • pepitas
  • hemp hearts
  • asparagus
  • vegan sausage
  • nutritional yeast
  • balsamic dressing

Preparation

  1. Cook quinoa according to package instructions.

  2. Grill asparagus and vegan sausage until tender and cooked through.

  3. Wash and chop all vegetables and greens as needed.

  4. In a large bowl, combine all ingredients except dressing.

  5. Drizzle with balsamic dressing and toss gently to mix.

  6. Serve immediately.
