- 1/4 cup dry quinoa per portion
- smoked tofu
- smoked beetroot hummus
- baby peppers
- cucumber
- carrot
- sweetcorn
- edamame
- brussels sprouts
- rocket salad mix
- umami seasoning
- salt and pepper
Preparation
Cook the quinoa and veggies.
Mix all the ingredients together until combined.
