Quinoa Bowl with Vegetables and Mint Dressing

Ingredients

  • 200g quinoa
  • salt, pepper
  • 1 broccoli
  • 2 carrots
  • 8 dried tomatoes
  • 2 spring onions
  • 1 red chilli
  • 1/4 cucumber
  • olive oil
  • 3tb freshly chopped mint
  • 2tb lime juice
  • Grated skin of 1/2 lime
  • 3tb pumkin seeds
  • 1tb tomato puree
  • 1tb maple syrup
  • 1tb vinegar

Preparation

  1. cook the quinoa for about 20 minutes

  2. Chop the broccoli in small pieces

  3. Cut the carrots in thin stripes

  4. Chop the dried tomatoes

  5. Chop the cucumber in small pieces

  6. Cook the broccoli and carrots for about 2 minutes

  7. Cut the chili and spring onions in small pieces and fry in oil

  8. Mix veggies, onions, chili and quinoa in a bowl

  9. Mix all other ingredients to a dressing

  10. Combine with the quinoa

  11. Place quinoa on plates and top with pumpkin seeds

  12. Or put in a jar and take it to go
