Kale Salad with Tofu and Avocado Dressing

Ingredients

  • Kale
  • Tofu
  • Pomegranate
  • Avocado
  • Cucumber
  • Shredded carrots

Dressing

  • 1/2 ripe avocado
  • 3-4 sprigs fresh dill
  • Juice of half a small lime
  • 2 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 2 tsp liquid sweetener of choice
  • Pinch of salt
  • 1/4 cup water

Preparation

  1. Combine all dressing ingredients in a small blender and blend until creamy.

  2. Add a little more water if the sauce is too thick for your liking.

  3. Add a little of the dressing to the kale.

  4. Top over the completed bowl with tofu, pomegranate, avocado, cucumber, and shredded carrots.
