Kale Salad with Tofu and Avocado Dressing
Ingredients
- Kale
- Tofu
- Pomegranate
- Avocado
- Cucumber
- Shredded carrots
Dressing
- 1/2 ripe avocado
- 3-4 sprigs fresh dill
- Juice of half a small lime
- 2 tsp apple cider vinegar
- 1/2 tsp garlic powder
- 2 tsp liquid sweetener of choice
- Pinch of salt
- 1/4 cup water
Preparation
Combine all dressing ingredients in a small blender and blend until creamy.
Add a little more water if the sauce is too thick for your liking.
Add a little of the dressing to the kale.
Top over the completed bowl with tofu, pomegranate, avocado, cucumber, and shredded carrots.
