Vegan Bulgur and Tofu Meal Prep

Ingredients

  • bulgur
  • tomatoes
  • cucumber
  • salt
  • pepper
  • parsley
  • lime
  • garlic
  • tofu

Preparation

  1. Boil bulgur in salted water until done, then drain.

  2. Add tomatoes, cucumber, salt, pepper, parsley, lime juice, and garlic to the bulgur and mix together.

  3. Press tofu to remove water, chop into cubes, and fry in a garlic marinade.

  4. Make homemade hummus.

  5. Combine the bulgur mixture, fried tofu, hummus, and salad.
