Light Summer Bulgur Salad with Fresh Herbs

Ingredients

  • 150g bulgur
  • 450ml vegetable broth
  • 2 handfuls of parsley
  • 1 handful of mint
  • 1 cucumber
  • 3 tomatoes
  • 1 red onion
  • Juice of 1 lemon
  • 5 tablespoons olive oil
  • Salt and pepper

Preparation

  1. Cook the bulgur in the vegetable broth for about 7 minutes

  2. Keep stirring it in between and add a bit more water if needed

  3. Let it cool down and rinse in cold water

  4. Chop the cucumber, onion and tomatoes into tiny pieces

  5. Chop parsley and mint into really small pieces

  6. Mix with the bulgur

  7. Mix in lemon juice, salt, pepper and olive oil
