Creamy Cashew Potato Soup
Ingredients
- 2 large potatoes diced
- 1 1/2 teaspoons of salt
- pepper
- 1 large onion diced
- 2 crushed garlic cloves
- 2 tablespoons of olive oil
- 1/2 cups of cashews
- 3 cups of water
- parsley or chive for garnishing
Preparation
In a pot place the oil, salt, garlic, cashews and onion and sauté for 5 minutes on low heat
Place the potatoes and 3 cups of water
Boil for 20 minutes or until the potatoes are tender
Let the mixture cool a little then place it in a blender
Place the soup back in the pot and cook for a further 15 minutes on low heat
Taste for seasoning
Garnish with parsley or chives when ready to serve
