Creamy Cashew Potato Soup

Ingredients

  • 2 large potatoes diced
  • 1 1/2 teaspoons of salt
  • pepper
  • 1 large onion diced
  • 2 crushed garlic cloves
  • 2 tablespoons of olive oil
  • 1/2 cups of cashews
  • 3 cups of water
  • parsley or chive for garnishing

Preparation

  1. In a pot place the oil, salt, garlic, cashews and onion and sauté for 5 minutes on low heat

  2. Place the potatoes and 3 cups of water

  3. Boil for 20 minutes or until the potatoes are tender

  4. Let the mixture cool a little then place it in a blender

  5. Place the soup back in the pot and cook for a further 15 minutes on low heat

  6. Taste for seasoning

  7. Garnish with parsley or chives when ready to serve
