Oil-Free Avocado Pesto with Cashews and Dried Tomatoes

Ingredients

  • 1 avocado
  • 30g cashews
  • 6 dried tomatoes (22g)
  • 2 tbsp apple cider vinegar (10g)
  • seasoning (I recommend garlic, pepper and chili)
  • salt (optional)

Preparation

  1. Make double the amount if desired for easier blending.

  2. Blend all the ingredients together until smooth.

  3. Serve with whole-grain pasta or stewed vegetables for example.
