Oil-Free Avocado Pesto with Cashews and Dried Tomatoes
Ingredients
- 1 avocado
- 30g cashews
- 6 dried tomatoes (22g)
- 2 tbsp apple cider vinegar (10g)
- seasoning (I recommend garlic, pepper and chili)
- salt (optional)
Preparation
Make double the amount if desired for easier blending.
Blend all the ingredients together until smooth.
Serve with whole-grain pasta or stewed vegetables for example.
