Avocado Pesto Zoodles with Mushrooms
Ingredients
- 1 Cup Fresh Basil
- 1/2 Avocado
- 1/2 Cup Water
- 1/4 Cup Nutritional Yeast
- 1/4 Cup Pine Nuts (or raw cashews & walnuts work too)
- 2 Cloves Garlic
- Juice of 1 lime or lemon
- Salt
- Pepper to taste
Preparation
Fill a large pot 3/4 full with water, bring to a boil.
To a food processor, add basil, avocado, water, nutritional yeast, pine nuts, garlic, lime juice and salt and pepper to taste. Mix to combine.
Continue blending, scraping down sides as needed, until creamy and fully combined. If it has trouble blending add a bit more water.
Add to noodles or use as a dipping sauce.
