Fresh Collard Green Wraps with Basil Pesto and Veggie Mix

Ingredients

  • collard green leaves
  • fresh basil
  • pine nuts
  • garlic cloves
  • lemon juice
  • nutritional yeast
  • salt
  • olive oil
  • water
  • mushrooms
  • pecans
  • cooked garbanzo beans
  • green onions
  • cilantro
  • parsley
  • garlic powder
  • pepper
  • lime juice
  • hot sauce (optional)
  • avocado (optional)

Preparation

  1. In a food processor, add fresh basil, pine nuts, garlic cloves, lemon juice, nutritional yeast (optional), salt to taste, olive oil, and water, then blend to desired creaminess to make the pesto.

  2. For the veggie mix, combine mushrooms, pecans, cooked garbanzo beans, green onions, cilantro, parsley, garlic powder, salt and pepper to taste, and lime juice.

  3. Smear the pesto on a collard green leaf, add the veggie mix and optional hot sauce, then wrap and enjoy.

  4. If preferred, use avocado instead of or in addition to the pesto.
