Stuffed Sweet Potatoes with Veggies and Avocado Sauce

Ingredients

  • 2 sweet potatoes
  • oil (optional)
  • salt (optional)
  • carrots
  • red onions
  • celery
  • cooked garbanzos
  • garlic
  • red cabbage
  • squash
  • one avocado
  • water
  • lime juice
  • serrano
  • garlic (for sauce)
  • salt (for sauce)
  • pepper
  • cilantro

Preparation

  1. Bake 2 sweet potatoes in the oven at 400F for 30 minutes. Optionally, coat the outside with oil and salt.

  2. In a pan, cook leftover veggies such as carrots, red onions, celery, cooked garbanzos, garlic, red cabbage, and squash.

  3. Once the veggies are cooked, mix them with the inside of the baked potato.

  4. Add the avocado sauce made from one avocado, water, lime juice, serrano, garlic, salt, pepper, and cilantro.
