Stuffed Sweet Potatoes with Avocado Sauce

- Cooked garbanzos
- Garlic
- Red cabbage
- Squash
Avocado sauce
- 1 avocado
- Water
- Lime juice
- Serrano pepper
- Garlic
- Salt
- Pepper
- Cilantro
Preparation
Bake 2 sweet potatoes in the oven at 400°F for 30 minutes. Optionally, coat the outside with oil and salt.
In a pan, cook vegetables such as carrots, red onions, celery, cooked garbanzos, garlic, red cabbage, and squash until done.
Mix the cooked vegetables with the inside flesh of the baked sweet potatoes.
Prepare the avocado sauce by combining one avocado, water, lime juice, serrano pepper, garlic, salt, pepper, and cilantro and blending until smooth.
Add the avocado sauce to the potato and vegetable mixture and serve.
