Stuffed Sweet Potatoes with Veggies and Avocado Sauce

- 2 sweet potatoes

Vegetables
- carrots
- red onions
- celery
- cooked garbanzos
- garlic
- red cabbage
- squash
Avocado sauce
- 1 avocado
- water
- lime juice
- 1 serrano pepper
- garlic
- salt
- pepper
- cilantro
Preparation
Bake 2 sweet potatoes in the oven at 400°F for 30 minutes. Optionally, coat them with oil and salt before baking.
In a pan, cook leftover vegetables such as carrots, red onions, celery, cooked garbanzos, garlic, red cabbage, and squash.
Mix the cooked vegetables with the inside of the baked sweet potatoes.
Prepare the avocado sauce by blending one avocado, water, lime juice, serrano pepper, garlic, salt, pepper, and cilantro.
Add the avocado sauce to the mixture and serve.
