Purple Sweet Potato Hummus Dip
Ingredients
- 1 medium-sized baked purple sweet potato
- 1/2 can chickpeas, drained
- 1 garlic clove
- 5 tbsp water
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tbsp nutritional yeast
- 1/2 tsp salt
Toppings
- parsley
- sesame seeds
- drizzle of sesame oil
- chickpeas sautéed with turmeric
- mint leaves
Preparation
Remove the skin from the sweet potato.
Blend all ingredients in a food processor or blender until smooth.
Add a little bit more water if needed.
Enjoy the hummus as is or with optional toppings.
