Purple Sweet Potato Hummus Dip

Ingredients

  • 1 medium-sized baked purple sweet potato
  • 1/2 can chickpeas, drained
  • 1 garlic clove
  • 5 tbsp water
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tbsp nutritional yeast
  • 1/2 tsp salt

Toppings

  • parsley
  • sesame seeds
  • drizzle of sesame oil
  • chickpeas sautéed with turmeric
  • mint leaves

Preparation

  1. Remove the skin from the sweet potato.

  2. Blend all ingredients in a food processor or blender until smooth.

  3. Add a little bit more water if needed.

  4. Enjoy the hummus as is or with optional toppings.
