Vegan Banana Pancakes
Ingredients
- 2 ripe mashed bananas
- 2 tsp baking powder
- 2 cups almond milk
- 2 cups flour (sub oat flour or gluten free all purpose 1:1 flour)
- vegan butter or coconut oil for frying
- recommended batter add-ins: 1 tsp vanilla extract, 1 tsp cinnamon, 2 tbsp maple syrup
Preparation
In 1 bowl, mash the ripe bananas, mix with baking powder, almond milk, and option add ins
Then, stir in flour and mix until combined. Batter will be slightly lumpy
Heat a skillet on the stove to medium and once it’s hot, add a little butter and spoon in about 3-4 tablespoons of batter per pancake
Cook until bubbles form and then flip the pancakes
