Easy Homemade Sazón (Sofrito)
Ingredients
- 1 medium onion, quartered
- 1 red bell pepper
- 1 green bell pepper
- 6 garlic cloves
- 1 bunch cilantro
- 1/4 cup parsley
- 1/2 vegetable bouillon
- 2 stalks celery, roughly chopped
- juice of 1 lime
- 1 tsp oregano
- 1/2 tsp salt
- 1-2 tsp oil
- 1/3 cup sazón sofrito
- 2 cans chickpeas
- 1 tbsp tomato paste
- 1/4 tsp adobo seasoning (I used @eatloisa)
- 1/4 tsp cumin
- 1/4 cup water
- 1 bunch spinach
Preparation
Place all ingredients in a food processor and process until you have a course paste
Heat up some oil in a pan and add in sazón/sofrito and stir-fry it until it becomes fragrant. Add in tomato paste and sauté for 1-2 minutes. Add chickpeas, cumin, and adobo and mix together and cook for 1-2 minutes. Add in spinach and 1/4 cup water. Stir well and allow mixture to cook on low heat/simmer for 10 minutes. Serve with rice and avocado
