Ingredients

  • 1 medium onion, quartered
  • 1 red bell pepper
  • 1 green bell pepper
  • 6 garlic cloves
  • 1 bunch cilantro
  • 1/4 cup parsley
  • 1/2 vegetable bouillon
  • 2 stalks celery, roughly chopped
  • juice of 1 lime
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1-2 tsp oil
  • 1/3 cup sazón sofrito
  • 2 cans chickpeas
  • 1 tbsp tomato paste
  • 1/4 tsp adobo seasoning (I used @eatloisa)
  • 1/4 tsp cumin
  • 1/4 cup water
  • 1 bunch spinach

How to steps

  1. Place all ingredients in a food processor and process until you have a course paste

  2. Heat up some oil in a pan and add in sazón/sofrito and stir-fry it until it becomes fragrant. Add in tomato paste and sauté for 1-2 minutes. Add chickpeas, cumin, and adobo and mix together and cook for 1-2 minutes. Add in spinach and 1/4 cup water. Stir well and allow mixture to cook on low heat/simmer for 10 minutes. Serve with rice and avocado
