5-Ingredient High Protein Chickpea Cookie Dough


  • 1,5 cups chickpeas, cooked (220 g)⁣
  • 1 cup dates, pitted and soft (150 g)⁣
  • 1/4 cup nut butter (50 g)⁣
  • 2 tbsp oats (15 g)⁣
  • 1 tsp vanilla extract⁣
  • 4 tbsp(25 g)⁣ cacao nibs or chocolate chips (optional)⁣


  1. If using canned chickpeas, rinse and drain well

  2. Then simply add all the ingredients to a food processor and mix well until smooth

  3. Mix in cacao nibs or chocolate chips, if using

  4. Place in the fridge for 15-20 minutes and enjoy with a spoon

  5. You could also add the cookie dough to your nice cream
