Easy Homemade Sazon Sofrito Chickpea Dish
Ingredients
Sazon
- 1 medium onion, quartered
- 1 red bell pepper
- 1 green bell pepper
- 6 garlic cloves
- 1 bunch cilantro
- 1/4 cup parsley
- 1/2 vegetable bouillon
- 2 stalks celery, roughly chopped
- Juice of 1 lime
- 1 tsp oregano
- 1/2 tsp salt
Chickpea components
- 1-2 tsp oil
- 1/3 cup sazon sofrito
- 2 cans chickpeas
- 1 tbsp tomato paste
- 1/4 tsp adobo seasoning
- 1/4 tsp cumin
- 1/4 cup water
- 1 bunch spinach
Preparation
Place all ingredients in a food processor and process until you have a coarse paste. Store in the fridge for up to 2-3 weeks or freeze for future use.
Chickpea cooking
Heat up some oil in a pan and add in sazon/sofrito and stir-fry until it becomes fragrant.
Add tomato paste and saute for 1-2 minutes.
Add chickpeas, cumin, and adobo seasoning and mix together and cook for 1-2 minutes.
Add spinach and 1/4 cup water. Stir well and allow mixture to simmer on low heat for 10 minutes.
Serve with rice and avocado.
