Easy Homemade Sazon Sofrito Chickpea Dish

Ingredients

Sazon

  • 1 medium onion, quartered
  • 1 red bell pepper
  • 1 green bell pepper
  • 6 garlic cloves
  • 1 bunch cilantro
  • 1/4 cup parsley
  • 1/2 vegetable bouillon
  • 2 stalks celery, roughly chopped
  • Juice of 1 lime
  • 1 tsp oregano
  • 1/2 tsp salt

Chickpea components

  • 1-2 tsp oil
  • 1/3 cup sazon sofrito
  • 2 cans chickpeas
  • 1 tbsp tomato paste
  • 1/4 tsp adobo seasoning
  • 1/4 tsp cumin
  • 1/4 cup water
  • 1 bunch spinach

Preparation

  1. Place all ingredients in a food processor and process until you have a coarse paste. Store in the fridge for up to 2-3 weeks or freeze for future use.

Chickpea cooking

  1. Heat up some oil in a pan and add in sazon/sofrito and stir-fry until it becomes fragrant.

  2. Add tomato paste and saute for 1-2 minutes.

  3. Add chickpeas, cumin, and adobo seasoning and mix together and cook for 1-2 minutes.

  4. Add spinach and 1/4 cup water. Stir well and allow mixture to simmer on low heat for 10 minutes.

  5. Serve with rice and avocado.
