Gnocchi with Wild Garlic Pesto
Ingredients
- 50g (2oz) wild garlic
- 60g (2oz) toasted cashews
- 1/2 lemon (juice)
- 3 tbs nutritional yeast
- 1 garlic clove
- 4 tbs olive oil
- 1/4 avocado
- salt and pepper
Preparation
Roast cashews in a pan and set aside to cool. Cook Gnocchi. (Trader Joes now has a vegan gnocchi)
Wash the wild garlic, pat dry and remove the stems
Add all ingredients in a blender and process
