Gnocchi with Wild Garlic Pesto
Ingredients
- Gnocchi
- 50g wild garlic
- 60g toasted cashews
- 1/2 lemon juice
- 3 tbs nutritional yeast
- 1 garlic clove
- 4 tbs olive oil
- 1/4 avocado
- salt and pepper
Preparation
Roast cashews in a pan and set aside to cool. Cook gnocchi.
Wash the wild garlic, pat dry and remove the stems.
Add all ingredients in a blender and process.
Add the pesto to the cooked gnocchi and fold in.
