Gnocchi with Wild Garlic Pesto

Ingredients

  • Gnocchi
  • 50g wild garlic
  • 60g toasted cashews
  • 1/2 lemon juice
  • 3 tbs nutritional yeast
  • 1 garlic clove
  • 4 tbs olive oil
  • 1/4 avocado
  • salt and pepper

Preparation

  1. Roast cashews in a pan and set aside to cool. Cook gnocchi.

  2. Wash the wild garlic, pat dry and remove the stems.

  3. Add all ingredients in a blender and process.

  4. Add the pesto to the cooked gnocchi and fold in.
