Gnocchi with Wild Garlic Pesto

Ingredients

  • 50g wild garlic
  • 60g toasted cashews
  • 1/2 lemon juice
  • 3 tbs nutritional yeast
  • 1 garlic clove
  • 4 tbs olive oil
  • 1/4 avocado
  • salt and pepper
  • Gnocchi

Preparation

  1. Roast the cashews in a pan and set them aside to cool. Cook the gnocchi.

  2. Wash the wild garlic, pat it dry, and remove the stems.

  3. Add all ingredients to a blender and process.

  4. Add the pesto to the cooked gnocchi and fold it in.
