Gnocchi with Wild Garlic Pesto
Ingredients
- 50g wild garlic
- 60g toasted cashews
- 1/2 lemon juice
- 3 tbs nutritional yeast
- 1 garlic clove
- 4 tbs olive oil
- 1/4 avocado
- salt and pepper
- Gnocchi
Preparation
Roast the cashews in a pan and set them aside to cool. Cook the gnocchi.
Wash the wild garlic, pat it dry, and remove the stems.
Add all ingredients to a blender and process.
Add the pesto to the cooked gnocchi and fold it in.
