Green Nutty Pesto with Arugula and Basil

Ingredients

  • 2 handfuls cashews
  • 4 tablespoons nutritional yeast
  • 1/2 teaspoon salt
  • 4 handfuls arugula
  • 3 handfuls walnuts
  • 10 tablespoons olive oil
  • 2 garlic cloves
  • 1/2 bunch basil
  • Splash of oat milk

Preparation

  1. Mix cashews, nutritional yeast and salt

  2. Mix arugula, walnuts, olive oil, basil and garlic in a mixer until desired texture

  3. Add in the cashew mix

  4. Mix all together

  5. If texture is too thick, add more oil and some oat milk

  6. Season with salt

  7. Place in a jar and add oil on top

  8. Place in the fridge
