Green Nutty Pesto with Arugula and Basil
Ingredients
- 2 handfuls cashews
- 4 tablespoons nutritional yeast
- 1/2 teaspoon salt
- 4 handfuls arugula
- 3 handfuls walnuts
- 10 tablespoons olive oil
- 2 garlic cloves
- 1/2 bunch basil
- Splash of oat milk
Preparation
Mix cashews, nutritional yeast and salt
Mix arugula, walnuts, olive oil, basil and garlic in a mixer until desired texture
Add in the cashew mix
Mix all together
If texture is too thick, add more oil and some oat milk
Season with salt
Place in a jar and add oil on top
Place in the fridge
