Broccoli Creamy Pasta
Ingredients
- 500 grams of mushrooms
- 1 broccoli head cut into florets and boiled
- 2 garlic cloves crushed
- 120grams of cashews
- 1/2 cup of spinach
- 1 tablespoon of parsley
- 1 1/2 teaspoons of salt
- pepper
- 1 tablespoon of walnuts
- i packet of penne pasta or pasta of your choice
- 1 cup water
Preparation
In a blender (i used my nutri bullet) place 2 crushed garlics, cashews, 1/2 teaspoon of salt, parsley, spinach, water, pepper and blend
Set aside
In a frypan add the oil, 1 teaspoon of salt, pepper, mushrooms and sauté for 5 minutes
Add the broccoli and combine
After 10 minutes place the cashew sauce in the mushroom mixture and cook for a further 10 minutes on low heat
Add some water if mixture is too thick
Cook pasta as per instructions then add it to the mixture and combine
