Broccoli Creamy Pasta

Ingredients

  • 500 grams of mushrooms
  • 1 broccoli head cut into florets and boiled
  • 2 garlic cloves crushed
  • 120grams of cashews
  • 1/2 cup of spinach
  • 1 tablespoon of parsley
  • 1 1/2 teaspoons of salt
  • pepper
  • 1 tablespoon of walnuts
  • i packet of penne pasta or pasta of your choice
  • 1 cup water

Preparation

  1. In a blender (i used my nutri bullet) place 2 crushed garlics, cashews, 1/2 teaspoon of salt, parsley, spinach, water, pepper and blend

  2. Set aside

  3. In a frypan add the oil, 1 teaspoon of salt, pepper, mushrooms and sauté for 5 minutes

  4. Add the broccoli and combine

  5. After 10 minutes place the cashew sauce in the mushroom mixture and cook for a further 10 minutes on low heat

  6. Add some water if mixture is too thick

  7. Cook pasta as per instructions then add it to the mixture and combine
