Garlicky Chickpeas and Kale

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/2 small onion, diced
  • 1 inch ginger, minced
  • 3 cloves fresh garlic, minced
  • 1/2 tsp garlic powder
  • 1 tsp garlic chili sauce
  • 1/4 cup water
  • 1/2 soy sauce
  • pinch of salt
  • 1 bunch kale, leaves removed from stems and roughly chopped

Preparation

  1. In a pan sauté onion with a pinch of salt

  2. Allow to soften then add in ginger and minced garlic

  3. Allow to sauté for 30 seconds or until fragrant

  4. Add in chickpeas, garlic chili sauce, water, soy sauce and garlic powder and stir to combine

  5. Add in kale and stir again

  6. Lower heat to low and place a lid on top

  7. Cover and allow to steam for 2-4 minutes

  8. Remove lid when leaves have wilted and stir to combine once more allowing any remaining water to cook off

  9. Stir in any extras

  10. To this i added some roasted cauliflower and some minced green onion

  11. Serve with rice and a tahini dressing on top

  12. Just add 1 tbsp tahini, juice of half a lemon, 1/4 tsp garlic powder, pinch of salt and 1-2 tbsp water

  13. Whisk until smooth and pour over top
