Garlic Chili Chickpeas

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 10 cherry tomatoes, halved
  • 1 tbsp soy sauce
  • 1-2 tsp garlic chili sauce
  • pinch of garlic powder
  • pinch of ginger
  • 3 tbsp veggie broth or water
  • Handful of kale

Preparation

  1. In a pan, add onion and sauté until translucent, add chickpeas and tomatoes and sauté for about 3 minutes

  2. Add in soy sauce, garlic sauce, broth, seasonings and kale

  3. Sauté until kale is wilted and liquid has cooked off

  4. Serve with brown rice

  5. I also added a little tahini sauce on top
