Garlic Chili Chickpeas
Ingredients
- 2 cans chickpeas, rinsed and drained
- 1 small onion, diced
- 4 cloves garlic, minced
- 1 tbsp garlic chili sauce
- 1 15oz can of crushed tomatoes
- 2 tsp smoked paprika
- 1 bay leaf
- 1 jalapeno, diced or 1/8 tsp cayenne pepper
- 1 green bell pepper, diced
- 1 tbsp soy sauce or coconut aminos
- 1 cup veggie broth
- 1 tbsp chickpea flour or regular flour
- 2 tsp sugar
Preparation
In a cup, whisk together flour and veggie broth then set aside. In a large sauce pan, add onion and sauté until translucent. Add in peppers and garlic and sauté until fragrant
Add in tomatoes, paprika and soy sauce and stir together. Allow to cook for 1-2 minutes
Add in broth mixture and remaining ingredients into the pan and stir to combine
Llow to simmer on a low heat for at least 20 minutes. Remove bay leaf, stir well then serve
Overtop just made a quick tahini dressing with lemon juice, tahini, garlic powder and water
