Garlic Chili Chickpeas Bowl

Ingredients

  • 1 tsp corn starch
  • 2 tbsp water
  • 1/4 medium red onion, diced
  • 1 small red bell pepper, diced
  • 1 can chickpeas, rinsed and drained
  • 2 tbsp soy sauce
  • 1 tbsp garlic chili sauce
  • 1 tbsp maple syrup
  • 1/2 tsp garlic powder
  • 1/4 tsp ginger powder
  • 1 tbsp sesame seeds (optional)

Preparation

  1. Combine corn starch and water, whisking together until no clumps remain. Set aside.

  2. Heat up a medium-sized non-stick pan and sauté onions with a pinch of salt until softened.

  3. Add red bell pepper and chickpeas, sautéing for about 1-2 minutes.

  4. Mix in soy sauce, garlic chili sauce, maple syrup, garlic powder, and ginger powder, coating chickpeas evenly.

  5. Pour in corn starch mixture and sesame seeds, continuing to sauté until the liquid thickens, coating chickpeas.

  6. Serve with rice, quinoa, or couscous. Also great in wraps. Pair with vegetables if desired.
