Vibrant Pumpkin Buddha Bowl Dish

Ingredients

  • delica pumpkin, roasted
  • broccoli
  • spinach, wilted
  • 1/2 avocado, sliced into a rose
  • edamame
  • cucumber
  • sweetcorn, air fried
  • smoked tofu
  • veg crisps
  • crispy fried onions
  • lime

Preparation

  1. Roast the delica pumpkin until tender.

  2. Wilt the spinach by steaming or sautéing.

  3. Air fry the sweetcorn until crispy.

  4. Slice the avocado into a rose shape.

  5. Prepare the remaining ingredients as needed: broccoli, edamame, cucumber, smoked tofu, veg crisps, crispy fried onions, and lime.

  6. Assemble all ingredients in a bowl to serve.
