Vibrant Pumpkin Buddha Bowl Dish
Ingredients
- delica pumpkin, roasted
- broccoli
- spinach, wilted
- 1/2 avocado, sliced into a rose
- edamame
- cucumber
- sweetcorn, air fried
- smoked tofu
- veg crisps
- crispy fried onions
- lime
Preparation
Roast the delica pumpkin until tender.
Wilt the spinach by steaming or sautéing.
Air fry the sweetcorn until crispy.
Slice the avocado into a rose shape.
Prepare the remaining ingredients as needed: broccoli, edamame, cucumber, smoked tofu, veg crisps, crispy fried onions, and lime.
Assemble all ingredients in a bowl to serve.
