Filling and Satisfying Nourish Bowl

Ingredients

  • 400g can chickpeas
  • sprinkle of curry powder
  • 1 medium sweet potato
  • a few large cauliflower florets
  • quinoa
  • avocado
  • spinach
  • lettuce

Preparation

  1. Preheat oven to 200°C/180°C fan/400°F/gas 6 and line a large baking tray with nonstick baking parchment.

  2. Peel and chop a medium sweet potato, halve a few large cauliflower florets, and drain and rinse 400g can chickpeas.

  3. Dry the chickpeas with a clean tea towel and sprinkle with curry powder, stirring until coated.

  4. Place the sweet potato chunks and cauliflower florets on the baking tray.

  5. Bake for 15 minutes.

  6. Add the curried chickpeas to the tray and bake for another 15 minutes until everything is crispy and cooked.

  7. Cook quinoa according to package instructions

  8. Serve the baked vegetables and chickpeas with cooked quinoa, avocado, spinach, and lettuce.
