Loaded Sushi Bowl with Sweet Soy Ginger Sauce

Ingredients

  • marinated tofu
  • brown rice
  • cucumber matchsticks
  • carrot matchsticks
  • roasted red pepper
  • avocado
  • nori
  • spring onion
  • lettuce
  • sweet soy and ginger sauce

Preparation

  1. Marinate the tofu and bake it until golden

  2. Cook the brown rice according to package instructions

  3. Prepare the vegetables by cutting cucumber and carrots into matchsticks, roasting red pepper if needed, slicing avocado, chopping spring onion and lettuce

  4. Make the sweet soy and ginger sauce by mixing soy sauce, grated ginger, and a sweetener like honey or sugar

  5. Assemble the sushi bowl by placing rice at the bottom, adding vegetables, tofu, nori, and drizzling with sauce
