Vegan Veggie Nourish Bowl Meal

- soy sauce
- garlic clove
- alpro soya cream
- rocket salad mix
- cucumber
- butternut squash
- sweetcorn
- carrot
- tofu
- broccoli
- red cabbage
- chilli flakes
- sesame seeds
- sesame oil
- tamari
- ginger
- avocado
- olives
- sweet miso
Preparation
Sauté mushrooms with garlic and soy sauce, then add alpro soya cream to make stroganoff.
Air fry tofu until crispy.
Roast broccoli and red cabbage, then season with chilli flakes and sesame seeds.
Mix sesame oil, tamari, and ginger to prepare the dressing.
Smash avocado for topping.
Assemble all components in a bowl: add rocket salad mix, cucumber, butternut squash, sweetcorn, carrot, tofu salad, mushroom stroganoff, smashed avocado, olives, and sweet miso, then drizzle with dressing.
