Moroccan Tofu Couscous Bowl

Ingredients

  • 8oz hodo chermoula moroccan tofu cubes
  • 2 c cooked couscous
  • 1/4 c sliced mushrooms
  • 1/4 c chopped roasted cashews + almonds
  • 1/4 c chopped parsley
  • 1 c chopped broccoli
  • 1 sliced avocado
  • 2 t chickpeas

Preparation

  1. Roast moroccan cubes on skillet for 20 min

  2. Turning once or twice to color on all sides

  3. Cook couscous

  4. Toss moroccan cubes tofu with couscous while still warm so the couscous soaks up flavors from the tofu

  5. Add rest of the ingredients with chopped almonds, chopped parsley, chickpeas, and drizzled with fresh lemon ? enjoy!
