Vegan Poke Bowl

Ingredients

  • 2 cups cooked white or brown rice.⁣
  • 1 cup organic corn.⁣
  • 2 cups shredded cabbage (red or green).⁣
  • 4 tbsp chopped green onion.⁣
  • 1 cup shredded carrot.⁣
  • 1 cup halved cherry tomatoes.⁣
  • 1 mango, pitted and sliced into cubes.⁣
  • 3/4 cucumber, chopped into 1/2 inch pieces.⁣
  • 1-2 avocados pitted and sliced lengthwise.⁣
  • 1 batch of crispy tofu (see link in bio).⁣
  • 1/2 cup cilantro, chopped⁣
  • 4 tbsp vegan kimchi.⁣
  • 1.5 cups edamame beans.⁣

Preparation

  1. Sauce: whisk together 2 tbsp rice vinegar, 1.5 tbsp maple syrup, 3 tbsp tamari, 1 tbsp sesame oil, 2 tbsp veg stock, pinch of salt, juice of 1/2 a lime, 1 tbsp fresh grated ginger, 2 cloves minced garlic.⁣

  2. Spicy mayo: mix 1/2 cup vegan mayo, 2 tbsp Sriracha, pinch of salt.⁣

  3. Divide all the fresh vegetables between 4 bowls and top with 1/4 of the sauce and a healthy drizzle of vegan mayo. Sprinkle sesame seeds on top
