Tangy Tofu Poke Bowl with Veggies
Ingredients
- 1 14oz package of tofu
- 1/3 cup soy sauce
- 1 tsp garlic
- 1 tsp red curry paste
- Juice from 1/2 lime
- 1 tbsp maple syrup
- 1 inch piece ginger, peeled and minced or 1.5 tsp ground
- 1 tsp sesame or avocado oil (optional)
- Handful of mixed greens
- 1/3 cup rice
- Red cabbage
- Carrots
- Cucumbers
- Avocado
- Pickled ginger
- Sesame seeds
- Cilantro
- Green onions
Preparation
Press and drain the tofu for at least 30 minutes. Then dice into 1-inch cubes.
In a bowl, whisk all of the marinade ingredients.
Add the tofu and marinade to a Tupperware, cover with lid, and give a gentle shake to coat all the pieces. Set aside to marinate for 30-60 minutes, occasionally mixing.
Cook the rice according to package instructions.
Prepare the vegetables by chopping or slicing as desired.
To assemble the bowl, add a handful of mixed greens, 1/3 cup rice, red cabbage, carrots, cucumbers, avocado, pickled ginger, and marinated tofu.
Sprinkle with sesame seeds, cilantro, and green onions.
Dress with extra marinade, soy sauce, peanut sauce, sriracha, or spicy mayo as preferred, and serve.
