Mango Avocado Buddha Bowl
Ingredients
- Jasmine rice, cooked according to package (or cauliflower rice)
- Purple cabbage, finely chopped
- Edamame, steamed
- Mango, diced
- Cilantro, chopped
- Avocado, diced
- Pickled onions
- Kale, steamed or sautéed
- Cucumber, sliced
- 1-2 wedges of lime
Sweet and spicy chili sauce
- 1 tsp Sambal Olek (Chili Garlic Sauce)
- 1/2 tsp Sriracha
- Splash of rice vinegar
- Splash of coconut aminos
- 1/2 tsp date syrup or agave
Preparation
Mix sauce ingredients and set aside.
Chop all ingredients, steam edamame, and sauté kale while rice is cooking.
Add all ingredients to a bowl, add a squeeze of lime juice and a spoonful of sauce.
