Mango Avocado Buddha Bowl

Ingredients

  • Jasmine rice, cooked according to package (or cauliflower rice)
  • Purple cabbage, finely chopped
  • Edamame, steamed
  • Mango, diced
  • Cilantro, chopped
  • Avocado, diced
  • Pickled onions
  • Kale, steamed or sautéed
  • Cucumber, sliced
  • 1-2 wedges of lime

Sweet and spicy chili sauce

  • 1 tsp Sambal Olek (Chili Garlic Sauce)
  • 1/2 tsp Sriracha
  • Splash of rice vinegar
  • Splash of coconut aminos
  • 1/2 tsp date syrup or agave

Preparation

  1. Mix sauce ingredients and set aside.

  2. Chop all ingredients, steam edamame, and sauté kale while rice is cooking.

  3. Add all ingredients to a bowl, add a squeeze of lime juice and a spoonful of sauce.
