Thai Palmini Noodle Salad

Ingredients

  • 1 large carrot, julienned
  • 1/2 cucumber, julienned
  • 1 red bell pepper, thinly sliced
  • 1/4 small purple cabbage, finely sliced
  • 1 c bean sprouts
  • 1 small head of broccoli, sliced
  • 1/4 c fresh mint leaves
  • 1/4 c fresh basil leaves
  • 1/2 bunch cilantro, chopped
  • 2 green onions, chopped
  • 1/2 c shelled edamame
  • 1/4 c roasted unsalted peanuts
  • peanut vinaigrette ?
  • 1/4 c rice vinegar
  • 1 1/2 tsp @bragglivefoodproducts coconut aminos
  • 2 tsp sesame oil
  • 1/4 c water
  • 1 lime, juiced
  • 1 tbsp @justdatesyrup (or agave)
  • 2 tbsp ginger, finely chopped
  • 1/2 tsp garlic granules
  • 4 tbsp @pb2foods pure (unsweetened)

Preparation

  1. Combine all ingredients for salad in a large bowl. Toss to combine. Distribute to dishes to store for lunches for the week

  2. If serving immediately, toss with dressing right away. Otherwise, top with dressing immediately before serving
