Thai Palmini Noodle Salad
Ingredients

- 1 large carrot, julienned
- 1/2 cucumber, julienned
- 1 red bell pepper, thinly sliced
- 1/4 small purple cabbage, finely sliced
- 1 c bean sprouts
- 1 small head of broccoli, sliced
- 1/4 c fresh mint leaves
- 1/4 c fresh basil leaves
- 1/2 bunch cilantro, chopped
- 2 green onions, chopped
- 1/2 c shelled edamame
- 1/4 c roasted unsalted peanuts
- peanut vinaigrette ?
- 1/4 c rice vinegar
- 1 1/2 tsp @bragglivefoodproducts coconut aminos
- 2 tsp sesame oil
- 1/4 c water
- 1 lime, juiced
- 1 tbsp @justdatesyrup (or agave)
- 2 tbsp ginger, finely chopped
- 1/2 tsp garlic granules
- 4 tbsp @pb2foods pure (unsweetened)
Preparation
Combine all ingredients for salad in a large bowl. Toss to combine. Distribute to dishes to store for lunches for the week
If serving immediately, toss with dressing right away. Otherwise, top with dressing immediately before serving
