Thai Palmini Noodle Salad
Ingredients
- 1 package Palmini pasta linguini
- 1 large carrot
- 1/2 cucumber
- 1 red bell pepper
- 1/4 small purple cabbage
- 1 cup bean sprouts
- 1 small head of broccoli
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- 1/2 bunch cilantro
- 2 green onions
- 1/2 cup shelled edamame
- 1/4 cup roasted unsalted peanuts
Peanut vinaigrette
- 1/4 cup rice vinegar
- 1 1/2 teaspoons coconut aminos
- 2 teaspoons sesame oil
- 1/4 cup water
- 1 lime
- 1 tablespoon date syrup or agave
- 2 tablespoons ginger
- 1/2 teaspoon garlic granules
- 4 tablespoons PB2 pure unsweetened
Preparation
Rinse the Palmini pasta linguini and boil for 10 minutes, then cool it.
Combine all salad ingredients in a large bowl and toss to combine.
Distribute the mixture to dishes for storage or to prepare for lunches for the week.
Mix all peanut vinaigrette ingredients together to make the dressing.
If serving immediately, toss the salad with the dressing right away; otherwise, add the dressing just before serving.
