Cranberry Almond Spinach Salad

Ingredients

Salad

  • 450 gm baby spinach
  • 1 cup sliced almond, toasted
  • 1 cup dried cranberry

Dressing

  • 1/4 cup white vinegar
  • 2 tbsp apple cider vinegar
  • 3 tbsp sugar (I used coconut sugar)
  • 1/2 cup olive oil
  • 3 tbsp honey
  • 1 tbsp finely chopped shallots
  • 2 tbsp toasted sesame seeds
  • 1 tbsp poppyseeds (optional)

Preparation

  1. Mix all the dressing ingredients together.

  2. Drizzle the dressing over the salad ingredients and toss to combine.

  3. Serve immediately and enjoy.
