Fresh Summer Salad with Arugula and Croutons

Ingredients

  • arugula
  • heirloom cherry tomatoes
  • sliced larger tomatoes
  • cucumber
  • 1/2 avocado
  • thinly sliced red onion
  • pickles
  • capers
  • Himalayan salt
  • black pepper
  • drizzle of olive oil
  • red wine vinegar
  • lemon juice
  • sourdough bread

Preparation

  1. Combine arugula, heirloom cherry tomatoes, sliced larger tomatoes, cucumber, avocado, thinly sliced red onion, pickles, capers, Himalayan salt, black pepper, drizzle of olive oil, red wine vinegar, and lemon juice in a bowl.

  2. Toast a slice of sourdough bread with olive oil on it.

  3. Add the toasted sourdough as croutons on top of the salad when ready to serve.
