Italian Summer Rolls

Ingredients

  • 1/4 of a head of lettuce
  • 6 leaves of basil
  • 1 small handful of arugula
  • 1 cup of chopped cherry tomatoes
  • 6 dried tomatoes (preserved in oil)
  • 1/3 of a cup of chopped walnuts
  • 1 tbsp of capers

Preparation

  1. Wash the lettuce, arugula, basil and tomatoes and chop the basil very thin

  2. Slice the dried tomatoes into small pieces and toss all of the ingredients in a big bowl

  3. We did not season the salad or add a dressing, because the dried tomatoes and the capers add enough salt and the remaining oil on the dried tomatoes season the salad very well

  4. If this is not enough seasoning for you, you can always add some lemon juice, extra salt or another dressing of your choice
